Ingredients:
- 2 boneless, skinless chicken breasts, pounded thin
- 1 cup gluten-free breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten
- 1 cup marinara sauce check for gluten-free label
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced red onion
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
Get the oven ready by heating it up to 400F 200C
Grate Parmesan cheese and gluten-free breadcrumbs together in a shallow dish
First, coat each chicken breast with the beaten egg
Then, coat it with the breadcrumb mixture
Line a baking sheet with parchment paper and put the chicken breasts on it
Put it in the oven and bake for 20 to 25 minutes, or until the chicken is fully cooked and the coating is golden brown
While that is going on, mix mixed greens, cherry tomatoes, and sliced red onion with balsamic vinaigrette in a large bowl
Let the chicken cool down a bit after it's done cooking, then cut it into strips
Put some salad on each plate, then add some sliced chicken and marinara sauce on top
Add fresh basil leaves as a garnish, season with salt and pepper to taste, and serve right away
