Chicken and vegetable stew made in a slow cooker is a hearty and comforting meal that doesn't take much work. It's great for busy weeknights or when you just want something easy and tasty for dinner.
Ingredients:
- 4 chicken thighs, bone-in, skin removed
- 2 potatoes, peeled and diced
- 2 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
Place chicken thighs at the bottom of the slow cooker
Layer potatoes, carrots, onion, and garlic on top of the chicken
Pour chicken broth over the vegetables and chicken
Sprinkle dried thyme, rosemary, salt, and pepper over the ingredients
Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and vegetables are tender
Once cooked, remove chicken from the slow cooker and shred using two forks
Return shredded chicken to the slow cooker and stir to combine with the vegetables and broth
Adjust seasoning if necessary
Serve hot and enjoy!
