With soft chicken, juicy pineapple, and brightly colored bell peppers, this Pineapple Chicken Fried Rice is a great mix of sweet and savory tastes. It looks beautiful and tastes great when served in a pineapple bowl.
Ingredients:
- 2 cups cooked jasmine rice
- 1 cup diced pineapple
- 1 cup diced cooked chicken breast
- 1/2 cup diced bell peppers assorted colors
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- 2 green onions, chopped for garnish
Instructions:
On medium heat, warm up the sesame oil in a big pan
Add the onion and garlic and cook until the smell is nice
Move the onion and garlic to the side and add the beaten eggs to the pan
Scramble the eggs until they are cooked
Put diced chicken, bell peppers, and pineapple in the pan and stir-fry for two to three minutes
Put cooked rice in the pan and add soy sauce and oyster sauce
Make sure the rice is well mixed
Add salt and pepper to taste, and then cook for another two to three minutes
Before serving, sprinkle with chopped green onions
