A healthy and tasty detox soup that is great for getting your body back on track. This recipe for a pressure cooker is quick and easy to make. It's full of colorful vegetables and fragrant spices.
Ingredients:
- 1 cup chopped kale
- 1 cup diced carrots
- 1 cup chopped celery
- 1 cup diced zucchini
- 1 cup chopped cabbage
- 1 cup chopped onion
- 3 cloves minced garlic
- 1 tablespoon grated ginger
- 1 tablespoon olive oil
- 6 cups vegetable broth
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Juice of 1 lemon
Instructions:
Set the pressure cooker to saut mode and heat olive oil
Add garlic, ginger, and onion
Saut until onions are translucent
Add carrots, celery, zucchini, cabbage, and kale
Saut for another 3-5 minutes
Pour in vegetable broth and add turmeric, cumin, paprika, salt, and pepper
Stir well
Secure the pressure cooker lid and set to cook on high pressure for 8 minutes
Once done, release pressure and open the lid carefully
Stir in lemon juice and adjust seasoning if needed
Serve the cleansing detox soup hot
